Crockpot Lentil Soup Recipe


A simple, fast, nourishing lentil soup or stew that invites you to a savory and aromatic experience. A taste so good your children will love it too!

Prep Time: 20 minutes Cook Time: 6-8 hours in crock-pot Servings: 8



Here’s what you need...  1 tbsp olive oil  1 medium yellow onion, minced (about 1 cup)  1 celery stalk, diced small  3-5 cloves garlic, minced  1 carton (32 fl oz) vegetable broth  1 28-oz can diced tomatoes  1-2 chopped carrots  1 cup uncooked brown or green lentils  1/2 cup quinoa  1 tsp or more Garam Masala spice  1 tsp sea salt  ¼ - 1 tsp freshly ground black pepper  2-3 tbsp fresh parsley leaves, chopped and/or 2-3 tbsp fresh cilantro stems and leaves, chopped

Directions: 1. In a large skillet, heat the olive oil gently. Add onions, celery and garlic; cook until translucent. 2. Place in crock-pot and add the broth, tomatoes, carrots, lentils, quinoa, and all of the spices and fresh herbs. 3. When finished, remove from heat and serve with a sprinkle of fresh cilantro.
