Here’s what you need...
1 tbsp olive oil
1 medium yellow onion, minced (about 1 cup)
1 celery stalk, diced small
3-5 cloves garlic, minced
1 carton (32 fl oz) vegetable broth
1 28-oz can diced tomatoes
1-2 chopped carrots
1 cup uncooked brown or green lentils
1/2 cup quinoa
1 tsp or more Garam Masala spice
1 tsp sea salt
¼ - 1 tsp freshly ground black pepper
2-3 tbsp fresh parsley leaves, chopped and/or 2-3 tbsp fresh cilantro stems and leaves, chopped
Directions: 1. In a large skillet, heat the olive oil gently. Add onions, celery and garlic; cook until translucent. 2. Place in crock-pot and add the broth, tomatoes, carrots, lentils, quinoa, and all of the spices and fresh herbs. 3. When finished, remove from heat and serve with a sprinkle of fresh cilantro.
